* Fresh Oysters 

* Oyster in a jelly cucumber, pearl of gin tonic

* Lemon cream with minced raw langoustines, champagne sabayon

* Marinated wild salmon "zeegroentjes" and pink grapefruit

Walking dinner 20 pm:

* Carpaccio of low temperature cooked veal fillet with root structures.

* Glazed pork belly with parsnip puree and crispy salsify

* Dogfish "in green"

* St. Jakob Mussel in its shell cooked bottle gourd, beukenzwammetjes and an emulsion of  shrimp

* Pasta carbonara with truffle gravy and crispy sweetbreads

* Lamb chop with grilled eggplant, peppers and smoked hand-rolled couscous

Dessert snacks 

Herve cheese souffle

Caramelized pear with cold white chocolate zabaglione and hazelnut crumble

Mini chocolate with raspberry sorbet moeulleux

Drinks times the walking dinner: wine bar, coffee, soft drinks and beers, ... everything a volonté to 24 hours
