Grilled corncob - in the oven or on the BBQ

Corncobs

The frozen corncobs are already blanched so you don’t have to cook them. You don’t even have to defrost them. The corncobs are ready for the barbecue or grill. Spread some olive oil over the corncobs. Season with salt and pepper. Grill in the oven for about 15 minutes (depending on the type of oven this can vary to 20-25 minutes). Turn them from time to time so that all the sides caramelise evenly. On the barbecue grill the cobs for 10 to 15 minutes (over medium heat). Serve pure or with fresh lemon butter.

Tip: Prick the ends of the corncob with a strong skewer so you can turn them easily on the barbecue.

Lemon butter

Grate the peel of a lemon then squeeze out the juice. In a bowl beat the butter until it’s soft. Stir in the lemon peel and lemon juice to taste. Season with some parsley, cumin, paprika powder, chilli powder and salt. Place the butter on a piece of aluminium foil and shape it into a roll. Fold the aluminium foil shut and allow to harden for about 45 minutes. Cut the butter into slices and serve with the grilled corncobs.
