Stir-fried chicken with rice, courgette and Chinese pea pods in Delino Sweet Sesame Wok & Dip sauce
100 g rice
2 dl chicken bouillon
50 g Chinese pea pods
2 dl Delino Sweet Sesame Wok & Dip sauce
1 red pepper
20 g coriander
Cut the chicken breast fillets into equally sized pieces, add half of the Delino Sweet Sesame Wok & Dip sauce and mix; allow to marinate overnight.
Cut the Chinese pea pods diagonally into equal sized pieces, and blanch them in salted, boiling water. Drain and cool under cold, running water. Dice the courgette and the sweet, red pepper.
Finely chop the onion and sauté in olive oil, and then add the rice and the chicken bouillon. Cover the pan and allow to cook slowly.
Add olive oil to the wok and warm up thoroughly. Add the marinated chicken and stir fry until golden. Add the pepper, the courgette and the Chinese pea pods. Braise the vegetables and add the rice and the remaining sauce. Mix well. Season with salt and pepper to taste.
Right before serving, add the finely chopped coriander.
