Cep, onion, Loma La Gloria


cep // onion, chopped // Viva Sara Loma La Gloria coffee // salted butter // spring onions, preserved // Altoni Strozzapreti Organic pasta // Didess mushroom crackers // Forest clover


Reduce the vegetable stock with the trimmings of the cep and the chopped onion. Pass the resulting gravy through a fine sieve and add an espresso cup of Viva Sara Loma La Gloria. Whisk with salted butter. Gently sauté the cep, along with the drained spring onions. Dress the plate and garnish with the foamy sauce, the cep, the pasta, the crackers and forest clover.
